It’s elderberry season. This is my second year sharing this recipe or a version of it. I tried this for the first time last year and with 4 kids in the house, I always dread cold, coughs and the flu like most other parents. Especially coughs are so hard to treat with young kids as there is practically nothing you can give them.
Except homemade remedies.
Flu and cold season is right around the corner (yay, right?!) and the small purplish-black berries are ripe and hanging prolifically in clusters in the hedgerows.
As I drive past them every day and have eagerly been awaiting this time of year, I said I get my first batch of syrup done for the colder months. They are narcotically outside my front door. #countryliving
Why is elderberry syrup healthy? Because elderberries….
- are very high in vitamin A
- have more vitamin C than oranges
- are very high in quercitin (an antioxidant)
- are anti-inflammatory and boots immune system
- possess antiviral properties that have been shown to treat colds and flu
- reduces severity and duration of cold/flu
That’s really all you need to know.
The syrup is very simple to make. Again this is a recipe where you really can’t go wrong. A little too much water or too much sugar doesn’t matter.

Get yourself 3 cups of elderberries.
Separate the berries from the stems, give them a good wash and simmer them in a pot with approx. 1.5l water and with the spices for around 20 mins.
Add around 1kg sugar and let the sugar dissolve and simmer a bit longer. (Elderberries are very bitter so the sugar will make it taste beautifully sweet)
Remove from the heat, let it cool and then strain out the solids. (Not before mashing them with the potato masher to ensure you got all the juices from the berries)
Add 2-3 spoons of honey into the cooling syrup. (If you use honey, then this won’t be suitable for babies under 1 year old! In this case you could use alternative sweeteners.)
Fill this into your sterilised bottle et voila! It tastes and smells beautiful and will sure see us through the winter months hopefully cold and cough free. Store the Elderberry Syrup in the fridge and it will last several months!
When the weather gets a bit colder we start taking 1 Tbs every day as cold prevention. Last year it worked for us! We had a cold/flu/cough free winter.
The kids love it and it works in hot water as well as elderberry tea.
